Phoenix has been used in the UK wine industry for years. It was bred in Germany specifically to produce in cool climates with natural resistance to mildew. The golden berries are used in single varietal wines or blended to create crisp, dry whites with notes of green apple. If left on the vine, the berries turn to a deep golden yellow making them perfect for eating off the vine too.
